Barrel Fermented Apple CiderFermented and Aged in 500 Liter French Oak Puncheons 5.87% Alcohol 1% Residual Sugar (Tastes Dry) Only 9 Kegs Produced We have this beautiful French Oak Puncheon in the winery dedicated to Apple Cider fermentation. A puncheon (500 liters) is a barrel that is over 2x the size of a traditional barrel; they are very subtle. The Chardonnay afficianados would cringe at the thought of allowing a pedestrian cider to mingle with such a blue blooded cask. But LFC is not an accolyte at the the church of Pomp and Circumstance. We were ex-communicated from that league long ago when we moved into the Asylum. We like flavor and aroma in our cider. If the fermentation calls for fine French oak then so be it! The puncheon is made by one of the finest cooperages in the world and imparts a gentle brown spice aroma to the cider (think nutmeg). It also gives a creamy vanilla finish. The cider is left unfiltered and kegged directly from the cask. The yeast are allowed to restart fermentation in the keg which gives a natural sparkle to the cider. We have started another fermentation in the same barrel. Get this one soon while supplies last. |
