Cinnamon and apples, each grown on land separated by great oceans and cultural divides, represent symbiosis in flavor. It is amazing that this flavor combination was ever discovered.

We are not inventing anything new by aging cider with cinnamon sticks. Grandma played with these ingredients back when baseball didn't have a designated hitter! That's right pitchers in both leagues used to have swing the bat...hmmm...strategy. Heck, we serve this cider out of the very same fridge she used for storing the leftover apple pie back in 1947!

We chose the Korjinte/Sumatra cinnamon for this cider. It is stronger, more spicy and textural than Ceylon (some would say Real) cinnamon. The bark of this shrub was aged in the cider to impart that gentle spice and warmth you know so well. A touch of sweetness balances the flavors and the bubbles just make it fun.
