Slightly sweet but slightly dry... ...the paradox.

As with all our rieslings I love to stop the fermentation and leave some residual grape sugar to balance. The 20 grams of sugar in the wine is from the grape and largely fructose - the sweeter, fruitier sugar. But don't expect a cloying sugar bomb. We made sure the wine had enough natural acidity at harvest to balance the sweetness. The sugar wraps around the acidity in the first part of the flavor.
