This Blanc de Blanc traditional method sparkling wine was slowly fermented in the bottle for two years, creating consistent, fine bubbles throughout the palate.

In 2020 we selected a specific section of the Eden Hill Vineyard consisting of a single clone known for its opulent fruit and balanced ripening. We fermented this in 2-225L barrels and one 500L puncheon with the goal of keeping the effects of the barrel aging in harmony with the fruit.

This is an extremely rare grape variety. The finished wine is dry and balanced with an intriguing floral aroma.

For this vintage and vineyard, we extended our yeast time in hopes of drawing out a little more earthy quality and broadening the structure of the wine. To keep the fruit alive there is a touch of natural residual sugar.

We resisted the siren’s call to label and sell all of this wine right away, and this wine has been aging peacefully in our wine library, but the time is right to share this special vintage with the world. This Blaufränkisch drinks beautifully now, but you could also store it in your cellar to enjoy for years to come.
